Happy (Healthy) Fat Tuesday!

Hey guys!  Happy Fat Tuesday!!! I wish I were down in New Orleans celebrating right now, instead of about to go teach my classes!  Boo!  Despite being from Louisiana, I’ve only been to New Orleans Mardi Gras once in my life…and once might have been enough!  I’ll see if I can dig up some old pics from my trip down there—I was with my bff’s from college, and it was a blast!

Today, in honor of Fat Tuesday, I had a nice fat-filled breakfast: two slices of millet bread topped with almond butter and coconut butter, plus a banana.  Mmmmm…that coconut butter is good stuff! Have you tried it yet?

Continuing on with my “Screw You Winter, I’m Going Outside!” campaign, I took Ella on a nice two mile walk despite the snow and the cold, and then I hopped back on the treadmill for another 3.  It felt good to get moving!

Lunch today was a salad in a BIG leafy bowl, and cheese and crackers in a small leafy bowl.  :-)

This bad boy contained: romaine, mushrooms, hard-boiled egg, green beans, bell pepper, carrots, and green garlic dressing.  Yum!

I used to have big salads for lunch all the time, and I think I burned myself out on them, but they’re starting to look appealing again.  I think it’s time to work them back into my rotation!

Okay—I’m off to teach—FINALLY!  I feel like I haven’t seen my students in forever! I wonder if they missed me… ;-)   Probably not!

    I get burnt out on big salads too sometimes… they’re so good though!

    Awesome salad! Looks fantastic. I just finished one myself with spinach, red leaf lettuce, roasted kabocha and black beans.

    I have not tried coconut butter or oil yet.

    Haha! I knew she was a saucy one!

    I haven’t tried coconut butter but it sounds sooo good! I haven’t seen it around here anywhere! I’ll have to look more carefully!

    LOVE that pup’dog! So cute.

    I burned myself out on laughing cow cheese during college, but just recently bought it again and had a wedge with breakfast! I missed it.

    I’ve always wanted to go to Mardi Gras! It looks so fun. I like a good salad for lunch, but I have to be in the mood. There’s so many other yummy options that I try not to have the same thing every day!

    I really love salads with boiled eggs, makes them so filling!

    Love your jeweled out dog…she’d put these sad little LA dogs to shame. :)

    Oh, Elouise! I’m not a big fan of salads in the winter, so I applaud you! Come summer, though, I love a big salad.

    OK, first I see the picture of George with his “valentine’s gift”, and then comes Ella with these tawdry Mardi Gras beads. You kids need to get your dogs under control!!!

    Besides that one unfortunate incident, New Orleans was pretty tame this year. All I did to get my beads was flash a smile and some sweet eyes. Lots of men would point at me and then toss stuff my way, no flashing necessary!

    Emily wondered what Ella did to get those Mardi Gras beads. Diego piped up. He remembered a certain magical afternoon with Ella. He knows what she does for beads.
