That dinner looks great! I looked up that cookbook on Amazon, and the authors are the Lee Brothers, and they have several. They are not vegetarian or vegan, but have lots of vegetarian recipes. I went through a huge no bake cookie phase in 2009, I just kept making new batches every week, it was insane.
