Fiesta for Two

Goooood evening!

Did you have a good Tuesday?  Considering that Tuesday is pretty much the new Monday in my life, I guess mine went okay.  My first two classes always go well, but by the last one (5:30-6:45), my students are usually pretty dead…and so am I!

I snacked on an almond coconut Kind bar around 4, which was just okay.  I think I was expecting it to be softer—I like my bars really chewy and soft!

It held me over pretty well, but by the time Ryan and I got home, we were both starving!

Luckily, dinner was a fast one—speedy taco salad with homemade chunky guacamole. 

Our taco salads included: blue corn chips (Garden of Eatin’), kidney beans, brown rice, spinach, tomatoes, salsa, and guac.

My homemade guac is pretty simple: avocado, red onion, cilantro, a dash of garlic salt, and lime juice.

And maybe a handful of vegan chocolate chips, just for good measure. ;-)

Okay…that’s gonna do it for tonight.  I’m ready to relax and head to bed early!

    That salad looks delicious! and that’s JUST how I like my guacamole. Yum. I also add some tomato to it every now and then if I’m going to be eating it as dip. And I think that cilantro totally takes good guacamole to amazing guacamole :)

    Fiestas = the best!! Love that salad, I think I might mimic that tonight! Those balls looked great in your other post too!

    mm, I love the KIND bars!! My favorite is the coconut one, even though I’m not supposed to be eating coconut (fructose intolerance). I love them. Your salads are always so beautiful and look so delicious.

    I have two classes that last until 6:30 or 7:30, and I am such a goner by that time. It’s kind of comforting to know that the instructors feel the same way!

    OMG that guac is GORGEOUS!!! that stuff is DEFINITELY the way to my heart…chips and guac will do it to me every time :)

    I agree with you about the KIND bars…definitely not my fave! That guacamole looks amazing though. Paired with Garden of Eatin’ chips? Sounds like heaven to me ;)

    That’s all that I learned in 6 years of Spanish, I think.
