Roasted Veggies, Vegging Out

Hey, hey kiddos!  How has your day been?

Mine has been a good one…I went on a major cleaning spree in our house, vacuuming and mopping until the floors were gleaming!  Ugh—it always grosses me out to see how much pet hair our vacuum cleaner picks up…pretty gross! 

After a couple of hours, the house was spic and span!

Around 6, we got started on dinner.  We were looking for something simple and comforting…and that’s exactly what we got!

Rosemary Roasted Vegetables

2 parsnips, chopped

2 carrots, chopped

1 white sweet potato, chopped

Toss with 1 tbsp. of olive oil and 1 tbsp. of fresh, minced rosemary.  Cook at 400 degrees for 30 minutes, flipping once.

Mmmmmm…is there anything that makes a house smell better than rosemary?  It’s just such a warm, comforting scent.  After about 25 minutes, our house smelled UH-mazing.

To go with our veggies, we cooked up a big pot of brown rice.  Much bread and Earth Balance was also consumed during the making of this meal.  :-)

I decided to add some extra green to my meal and started my dinner bowl with a layer of baby spinach:

Then, I topped that with the rice and veggies.  And then, just so that the meal didn’t get too classy, I topped it all with a squiggle of ketchup (this one’s for you, Lindsay):

This meal was lacking in in protein, but one meal of just good, comfy carbs won’t kill you, right?

For dessert, I whipped up another single serving of vegan vanilla chia pudding.  It really could not be easier—here’s how I did it.

In a microwave-safe bowl, combine two tablespoons of vegan vanilla pudding mix:

with a half a cup of vanilla hemp milk (you could use any non-dairy milk here):

Microwave for thirty seconds, until mixture is bubbling.  Stir briskly for about twenty seconds…it should begin to thicken a bit.  Pop it back into the microwave, and heat for another 20 seconds.  Stir again, and then add a tsp. of chia seeds:

Stir to incorporate the chia seeds into the pudding.  Refrigerate for at least an hour, until pudding has completely chilled.

It’s looking like an early night for this household—Ella is currently SNORING like a bear on her dog bed.  Guess that hike wore her out!

    That pudding sounds so exotic and good! But couldn’t you just use a nutmilk and it would thicken up? Because that is a prepackaged pudding after all

      Yep! The chia seeds are just for a little extra crunch/texture. If I weren’t going to add them though, I would increase the amount of pudding powder.

    I have that exact same pudding in my kitchen! Now I just need to get my hands on some chia seeds and I’ll be all set :)

    Yummy. I love a roasted veggie salad. We do this a lot during the summer. Try topping with toasted, seasoned chickpeas!

    Mm I’ve never seen that vegan pudding! I have some extra chia seeds I want to use, so I’ll have to be on the lookout!

    Roasted veggies are so simple but SO good! Definitely one of my favorite things to eat. Isn’t it magical how the flavors transform into something so rich and unexpected? I love it!

    And there is a whole lot of protein in there! There is a ton of protein in brown rice and especially leafy greens! :-)

    Both your salad and pudding look really good. How are you liking the Hemp milk?

      I like it! It kind of reminds me of almond milk. It has more sugar and calories than almond milk, so I don’t think I would buy it all the time, but I like it as a treat :-)

    Hey lady! Nice call with the ketchup! I love roasted veggies but don’t think I’ve ever had parsnips??? Are they like turnips? I need to get with the program here. Can you believe there’s only 7 days of your vegan challenge left? I can’t wait to here the recap of the month in terms of your energy, skin, etc. Will you be doing that?

      I know! I can’t believe it will be over soon! I’m actually kind of sad– I’ve really enjoyed it! Plus, I’m thinking about my February challenge, and I think it might be a beast of a challenge…stay tuned :-)

      I’ll definitely be doing a comprehensive recap of the Vegan month!

    Your dinner looks soooo good!!! I love white sweet potatoes but you can’t find them many places. Roasted veggies rock. Roasting them completely brings out the flavors and makes them taste so incredibly amazing.

    A major cleaning spree is on tap for my place, too. I actually don’t mind cleaning when things get really gross. It gives me a feeling of accomplishment when everything is done!

    I’ve seen chia seeds on a lot of blogs lately, but I’m kind of scared to try them! I’m not a huge seed/nut person. Do they have a strong taste?

      They really don’t have a taste at all, in my opinion. What they add for me is just texture– crunch at first, and then more “gelatinous” as the time passes. I put them in my oats in the morning, and they start out pretty crunchy, but by the time I’m on my last bite, they’re pretty gel-like.

      I’d give them a try! You can usually just buy them from the bulk bins in health food stores, so you could just buy a tiny amount to start with and see how you like them!

    I love your roasted veggie bowl and there is nothing wrong with a bowl of carbs on occassion! I am guilty of it too. :)

    The Soloist was really good but sad. I don’t know if I’d recommend it! An eye opening view of the homeless situation in LA for sure though!

      I know what you mean– I wanted the book to have a happier ending, but with non-fiction, you can’t just make up a happier ending than what actually happened, you know?

    Another great looking meal! I’m so glad I’m finished detoxing so I can start cooking again. I’ve been envious of all your wonderful food!!

    I absolutely love Rosemary. I think it is my herb of choice! Most people use basil, oregano, or parsley…I use lavender and rodemary go figure! :-)
