It’s a Beautiful Day

Any fans of U2? That song is one of my faves to run to!

We had a great morning!  A few of you asked me if my juice is enough to fill me up until lunch, and the answer is NO!!!  Haha, my stomach usually starts growing about an hour or two after drinking my juice…just in time for a mid-morning, pre-hike snack, today!

I dug into this 18 Rabbits bar right before we left for our hike.  It’s my last one that I brought back from Seattle :-(   I really liked these, but I don’t think they carry them at any of our stores!  If anyone from the 18 Rabbits headquarters is reading this and wants to send some my way for *ahem* professional review, please feel free! :-)

About 20 minutes from our house, there’s a nice state park called Canoe Creek State Park.  In the winter, people canoe (duh) and swim in the lake, and there are all sorts of trails that wind around the park.  We hadn’t been over there since October, so we decided to head over with the dogs and do a little hiking on this glorious winter day!

 We only ended up hiking about 3.5 miles, but it took forever! It was kind of slow-going with the snow and the ice.  By the time we got home, it was 12:45 and we were starving!

That juice is great, but let me tell you—it doesn’t offer much in terms of satiety!  I’m really glad I ate my 18 Rabbits bar before we hiked, or I would have been famished!

For lunch, I made a personal pan pizza of sorts:

Ezekial wrap, microwaved until crisp, and then topped with basil tofu ricotta, baby spinach, grape tomatoes, and avocado:

Plus apples and raw almond butter, and some Mary’s twigs and stems on the side.  After I finished, I was still feeling empty, so I had about 1/3 cup of granola.  Yum!

Our house is a mess, so I think I’m going to take the opportunity to do a little housework since we had such a great morning outside.

    Such fantastic pictures! you’re lucky you have a nice place like that, nearby, to hike and just be outside. We don’t really have any areas like that around here, sadly.

    That looks like it would have been such a fun and lovely hike! I really need to do a hike one of these days (sooner rather than later) as I think the last time I went hiking was about…. 7 years ago. Haha..

    What a lovely, beautiful day! I wish I had taken my camera out on my run! I saw some beautiful things!
    wow your tortilla with avocado and tomatoes literally just made my mouth water! Great picture!

    Try Amazon. They carry them. You’ll have to buy more than just one or two, but hey, if you like them!!!!

    This looks like such an amazing day! Your hike pictures are gorgeous :-) I have wanted to try 18 Rabbits for some time now, but I can’t find them in stores either!

    do you have any peet’s coffees near you? they sell 18 rabbits there. and you should be able to request it at your local whole foods!
