Stew Part Two
Hey guys! How was your Thursday?
Mine was pretty good—my classes seemed pretty long, and a lot of my students hadn’t read the material, so class discussion was kind of lacking. Oh well…every class discussion can’t be life-changing!
Around 4, I had a Greens Plus Omega-3 Chia Energy Bar. It was pretty good—it had a little bit of a funny aftertaste…but it was full of chia seeds…mmmm!
Instead of just sitting in my office for the break between my classes like I usually do, I thought I’d get a little exercise in, so I went for a stroll around campus. I ended up walking for a good 40 minutes…just enough time to clear my head and prepare for my final class! It was pretty chilly, but nice to get a little activity in.
When I got home around 6:45, I decided that some wine was in order…in our new crystal wine goblets!

Dinner was decidedly less fancy: leftovers!
We had two perfect servings of our eggplant and butternut squash stew leftover from Tuesday night. Don’t you just love leftovers after a long day? So easy!
Twas just as delicious the second time around!
Tomorrow, I have a fun lunch plan…my first blogger meet-up!!!! Ashley from Fashionably Fit also lives in Altoona, so we’re meeting up tomorrow for lunch at Panera! I’m super-excited to meet another food blogger in person! I joked to her that one of us needed to be carrying a bowl of oatmeal so that the other could pick her out of the crowd.
Other than that, our weekend is looking uber-low key so far—fine by me!

How fun to get to meet a fellow blogger! I love the glasses by the way. I think there needs to be some sort of trade in program for dishes and such – you know how they have for the designer purses????!!!

I love leftovers too. Sometimes they are even better the second time around. The Chia bars look interesting. I’ve never even tried Chia seeds! I need to.

Leftovers are amazing. I could practically live on them (until I have to cook something new so I get some leftovers again hehe).
Love your crystal goblets! I drink most of my drinks from stemware, life is more fun that way! Plus, I’m actually getting use out of the crystal that I registered for from my wedding.

I am SO the student who didn’t read and that must suck for the teacher!! Nice work taking a walk around campus. Are many of your students older than you? I found that I’m often one of the older students in my classes and that was so surprising for me.
I don’t have many older students, but that’s because it’s essentially a freshman english class. In my creative writing classes, I’ve had a few older students here and there. One semester, I had an older guy (maybe mid-thirties when I was early twenties) who was a total ass. He clearly had major problems with having a young female teacher. Whatever– I was the one giving out the grades at the end of the semester!
So great to hear about your blogger meetup! I’ll have to find other bloggers who live in Upstate NY so we can have oatmeal at Panera too!
