Freaky Friday

Hello!  How’s your day going?  It’s FRIDAY!! Which doesn’t mean as much to me now that I teach on Tuesdays and Thursdays, but still… :-)

My day has been very productive, actually.  Did some laundry right upon waking, got a lot of online grading done, and visited many of your lovely blogs!

Around 11:30, Ryan and I headed to the gym, where I mixed it up a bit.  I started off with 15 minutes on the elliptical, but quickly got bored.  I decided to have a bit of a “mish-mash” gym day.  After the elliptical, I did some chest presses and triceps work, and then headed back for some more cardio.  I started the treadmill off at 6 mph, and then upped it by .1 for every minute that passed.  So, by the time 9 minutes rolled around, I was movin’ and groovin’ at 6.9 mph.  From there, I did another 10 minutes, lowering it back down by .1 for every minute.  Gotta keep it interesting, right?  After the t-mill, I did some more weight work—leg presses, abs, and leg curls.  Whew! It was actually a really good workout!

When we got home around 12:40, we were starvin’ Marvin (who is that guy, anyway?).  I didn’t know what to make, which lead to a lunch that was a little bit crazy…but 100% delicious!

Savory Oats!!!

For my savory oats, I heated half a cup of oats and a cup of water in the microwave:

While that was cooking, in a small sautee pan, I cooked about a half a cup of mushrooms:

and a big handful of spinach:

I added about 1/4 cup of water to help them cook down. Once the spinach was wilted down, I added them to my oats, along with 1/4 avocado, sliced and a few shakes of tamari.

Ummm, yeah.  This lunch was ALL SORTS OF GOOD.  It was actually kind of reminiscent of sushi, with the grain, soy sauce, and avocado mixture.  The soft avocado went so well with the mushrooms and oats.  Just a delicious combination, altogether.  If you have the means, I highly recommend it.  ;-)

Not sure what the rest of the day holds.  A walk for the dogs is in order, as is a trip to Best Buy, since last night Baxter decided to make my computer power cord his newest chew toy.

First the accidents, now this!  I think Baxter has been replaced by his evil twin, Bernardo.  As part of my Christmas present, Ryan donated some money in my name to the United Against Puppy Mills foundation.  They sent us a bookmark to thank us, and I keep waving it in front of Baxter’s face as a threat.  The power cord is strike two, buddy.

Kidding.  Obviously.  They wouldn’t want a neutered male dog, anyway. :-)

    Oh I love savory oats…oh who am I kidding…I love any kind of oats!! haha! But seriously that meal looked delish! My Friday is definitely BANANAS!! Loved the video!

    I loooove mushrooms. They make everything yummy! Sorry Baxter (err, Bernardo) chewed through your power cord – we used to have problems with my rabbit doing that when I was younger.

    My day is bananas.. literally, that’s all I’ve eaten so far today. Lol. We have too many ripe wipes and no one eating them so I’ve taken on the challenge. :P

    Good job with the treadmill workout! I just read something the other day about adding spinach to oatmeal and my first reaction was “ick.” But when you really think about it, you have to work to make oats sweet. So it makes total sense. Thanks for sharing!

    Mmm I just had stirfry on top of raw spinach today with a fresh avocado mixed in and it was probably very similar in flavor to your lunch! Tasty.

    That combo looks great. I used to not be a huge fan of mushrooms before going mostly raw, but love the expensive, luxo varieties now!

    I think doing the treadmill workouts like that is a great idea! Otherwise you get super bored :) I have been meaning to do intervals like that… I’ve just been too lazy to plan them!
