Chickpea Mash & Melt

Hey y’all!  This has got to be a super speedy post because I’m already running late—last semester, my first class started at 2:40, and this semester I teach a 1:15 class, but I think my mind is still set on that 2:40 start time.  Which basically means, EEK! I’m LATE!!

This morning, I did a nice three point whatever mile run on the treadmill alternating between a 6 mph minute and a 7 mph minute for 30 minutes total.  Easy and fun!  After my run, while I was still gross and sweaty, I headed outside to clear a larger “toilet area” for Mr. Diva Dog.  This time, I cleared an area in the sun by one of the trees in our front yard.  Hopefully this spot will be more to his liking.

Let me tell you, snow shoveling is a workout!! I was huffing and puffing…I think I got a better workout shoveling snow than on the treadmill!

For lunch, I had a speedy chickpea mash sammie melt!

In a bowl, I mashed up half a cup of chickpeas with about a tsp. of Nasoya Dijon Nayonaise.  Great for getting your frustrations out, by the way!  I like to leave some of the chickpeas whole so that the mash is nice and chunky:

I then put the mash on an open-face Ezekial bun, topped both with spinach and Follow Your Heart vegan cheddar, and popped it in the microwave for a minute.

Easy, breezy, and cheesy.  :-)

I’ll be back after teaching with a dinner post!  I’m sure a snack will be called to duty at some point today as well.

    YUM! Is that cheese soy based? Have you ever heard of almond cheese? It is also gluten-free, soy-free and contains no cholesterol…it is made from almonds just like the almond milk. So yum!!

      Ooh, I’ll have to be on the lookout for that! I’d like to try decreasing the soy in my diet..but suddenly I’m noticing that I eat A LOT of soy!!! :-)

    I have the same complaint about 2% cheese — it just doens’t melt as well as the real deal.

    Ive never tried that cheese… It kinda melted??!?! Lol

    I hate when cheese doesn’t melt! And them sometimes when it does, it is like plastic.

    This sounds really good! I want to try making homemade veggie burgers. A lot of times people use black beans but I could see chickpeas being a more suiting base for my tastes

    I’ve wanted to try soy cheese for some time now. Does it taste like cheese?

      I think it tastes closest to cheese when it’s melted and used in something, like a wrap or a sandwich. Just on its own, I”ll be honest– it doesn’t taste that great. It’s worth trying, but you know…like many vegetarian/vegan substitutes, it doesn’t exactly taste like the real thing :-)

    Oh.. frick. THAT LOOKS SO GOOD! Wish there were vegan cheese around here. I’m still drooling over how amazingly delicious that looks. :o

    I’ve seen that cheese at the grocery store, but I’ve always stuck with the Rice Dream brand. I’ll have to give this one a try!

      Haha, I’ve always seen Rice Dream and stuck with Follow Your Heart…we’ll have to pull a switcheroo :-)

    I love this brand of cheese. Have you tried the mozzarella? It’s BY FAR the best! And it melts really well!

      Yeah, I like the mozzarella too! They were out of it at the store, so I went with the cheddar, which isn’t bad, but…I don’t think it’s quite as good as the mozzarella :-)

    I’ve always said that if I could find a really awesome vegan cheese substitute I could probably make the vegan commitment!

      Hmmm…I think on a scale of 1-10, 10 being the best cheddar you’ve ever tasted, and 1 being a soggy gym sock, this cheese would fall in the 6 range? It’s fine on a sandwich or as PART of a meal, but I definitely wouldn’t just slice it up and put it on crackers. I’ve also tried their mozzarella, which is pretty good melted. Give it a shot– see how you like it!

      I was going to ask the same question! Can’t decide if I think cheese is worth replacing … I feel like I’d rather just occasionally have real goat cheese.

    haha I like your scale of 1 being a soggy gym sock! the cheese I geuss looks better than it tastes huh? I am not a fan of cheese subsitutes too much! I prefer teh real stuff, in moderation of course! and shoverling IS a great workout!!

    LOL – I get frustrated with the FYH cheese because I can never get it to melt! Yours looks like it melted better than mine ever has when I’ve used it. Here’s hoping that larger area works for Diva Dog ;)

    For vegan cheeze, it melts as well as one can hope, doesnt it!
    I posted a recipe last week, called Vegan Cheezy Quesadillas and basically it’s my take on a cheeze spread. It’s not gonna be like a piece of real cheeze melting; it will be more like a spreadable cheeze, i.e. hummus like, but hey, it’s vegan and it works for me.

    Anyway, your food, as always looks awesome!!!!!!!

    great looking chickpea mash!! How is that cheese? ive been curious. Ive never had too much luck with vegan “cheese” products. So Im curious how that one tastes. Looks awesome though!!!

    That sandwich looks delicious – I love chickpeas. I’m going to have to try the soy cheese, after all these comments. How did Baxter do with his “special” area??

      Mom, you tried it when we were home! I think you like it, too! Remember….we melted it on a wrap, or something? Anyway, there’s some in y’all’s fridge stilll, if you want to try it again!

      Baxter did okay yesterday…he had one accident around 8:00…that Ryan then proceeded to step in. WHOOPS!! :-)
