The Incredible, Edible…Tofu?

Didn’t expect to hear from me quite so early, did you? Just trying to keep you on your toes
Well, as I’ve said before, my breakfasts tend to be pretty boring, so I don’t post them. Nobody needs to see my cereal + banana day in and day out, however delicious it may be.
However, if I ever cook something fun for breakfast, I’m all about posting it!
This morning, the fun with tofu as egg continued with a tofu veggie scramble.
Veggie scrambles have always been one of my favorite ways to use up any veggies in the fridge that are on their way to going bad.

Although veggie scrambles are nothing new to me, my tofu scramble this morning was a first.
First, I sauteed the veggies in a skillet with a bit of cooking spray:
Then, I added about 1/4 of an 18 oz. package of firm tofu (1/2 of what was left from yesterday’s “egg” salad). Along with the tofu, I added 1/4 tsp. turmeric, which gave the tofu it’s lovely golden “egg-like” coloring, plus a hearty shake of Zatarain’s cajun seasoning.
I cooked this combo for about 5 minutes:
…then plated it with a piece of Ezekial toast:
Delicious and filling!
By the way, many of you asked about the movie we saw last night—it was Up in the Air, with Geroge Clooney.
The verdict?
I loved it! It was very very well-crafted and focused on poignant human connections in our disconnected world. It was also a bittersweet commentary on people who have been affected by the bad economy. It perfectly captures the spirit of resilience that is needed in times like this. Finally, it contained a great love story, but managed to not turn sappy.
Also, George Clooney is hot.
Hope your Thursday is off to a great start! We have a full day planned…we’re leaving for Pennsylvania (20 hour car ride—EEK!!!) tomorrow, so we have to get everything we’ve been meaning to get done in the past two weeks, but haven’t, today. Isn’t that always the way it goes?

Your veggie photos are awesome! I’m not a huge tofu fan, but I keep on trying it. One tip you may want to try is to freeze it for 3 days then let thaw in fridge. It makes it easier to “wring out” and it gives it a different texture as well. This of course isn’t for the silken variety. I haven’t tried a scramble yet, but have done several “eggless” salads using different spices (like curry) and adding odds and ends like dried figs.
I listened to a Colleen Patrick-Goudreau podcast the other week, and she talked about that method of cooking tofu (freezing and then thawing out). I’m so intrigued– I definitely want to try this soon!
Glad to hear that movie is good, I’ll mark it down as a “must see”! Nick and I are going to see Avitar on Saturday, and I’m pretty excited.
This breakfast sounds fantastic. I’m not really into tofu, but if I was, I would eat this (it gives me bad gas and stomach pain). I love the comic you posted. I did my thesis on fresh vegetable food safety, so it made me laugh

I just tried my first tofu scramble last weekend and I liked it a lot. It was kind of like eating a stir-fry for breakfast… yum!
