Hot Mess

No, despite these lovely celebrity shenanigans, I’m merely referring to my lunch, which truly was a hot mess:
Mmmm…a hot, Mexican mess!
I combined 3/4 cup of chickpeas with 1 tbsp. of cashew cream and a big spoonful of Pace’s salsa (gotta love it), plus chopped red onion, a crumbled up piece of cornbread, and Follow Your Heart “cheddar.” Popped that in the microwave for about a minute and thirty seconds, and then topped it all off with chopped cilantro and cherry tomatoes. Yurm.
Mmmm…mixing the cashew cream with salsa was a stroke of pure genius, if I do say so myself.
Who doesn’t love a hot mess? Other than Tim Gunn, that is.
So, we went to Barnes and Noble this morning to do a little work (is it really time to start GRADING again? Boo! Hiss!), and after we finished our work, I started browsing and got a little carried away…and bought three new cookbooks! My purchases:
Vegan Cupcakes Take Over the World, by Isa Chandra Moskowitz and Terry Hope Romero (authors of Veganomicon, one of my all-time favorite cookbooks, even before I went veg)
The Joy of Vegan Baking, by Colleen Patrick-Goudreau (author of The Vegan Table, a cookbook that I cook from probably at least 4-5 times a week)
The Kind Diet, by Alicia Silverstone (I know, I know…a “diet” book? And a celebrity diet book at that? I couldn’t help it—it was 20 percent off, plus I’ve seen several recipes from the book featured in magazines, and they really do look good! You know you’re curious…I’ll give a full review when I’m done reading it!)
I had a B&N gift card to use, and I obviously got carried away. Oh well…I can’t wait to test some recipes from these books! We’re going over to my sister’s house tonight for dinner and we’re supposed to bring dessert, so I think cupcakes are definitely in order!

I made the Vanilla cupcakes from Vegan Cupcakes take over the world and wasn’t very impressed with them… I later heard from many that that’s the only recipe in the book that never comes out good.. hmm I picked the only recipe that doesn’t come out good what? I need to make something for Sunday and I was thinking of trying the rose water one.. can’t remember the name right now on top of my head.
I’m making the chocolate ones with buttercream icing…I’m about 2/3s done now, and they seem to be looking good!
In the veganomicon cookbook, there’s a recipe for pistachio rosewater cookies that is to DIE for.
Ah, I want some new cookbooks! I already have some that I need to start using but.. MORE!

Okay cashew cream sounds awesome! My favorite nut is the cashew so I would love it…but random question. Is cashew cream the same as cashew butter? (sorry if that was a dumb question)
No, that question totally makes sense. I guess the thing that makes them different is that with cashew cream, you add water (3/4 of a cup), whereas with a nut butter, you would just blend the nuts and allow their natural oils to release and make the butter. The consistency of the cashew cream was actually very similar to sour cream or yogurt, not grainy like a nut butter. We added lemon juice too, which gave it that “sour” flavor, but I could see if you were using it in a pasta dish instead of, say, ricotta cheese, you could definitely leave it unflavored, or add something else for a completely different flavoring. I think you could even use it in dessert dishes and flavor it with vanilla or cinnamon!

I have the cupcake and Alicia Silverstone book on my wishlist (still haven’t seen my ‘rents for the holidays). I read a few articles where she talks about how she does not think of “diet” as a “diet” but as a “lifestyle.” Can’t wait to hear more about it!
Yay for spur of the moment cookbook purchases! Last time I did that I got Vegan Yum Yum and Vegan Brunch (by Isa – does she have a million cookbooks or is it just me lol) and they were good decisions
Alicia Silverstone has been a veg forever so I would definitely trust her recipes. Gotta spend those gift cards!
