Potato, Potahhhhto
Good evening! Hope your night has gone well! We’ve had a fun one!
Tonight, my mom made a vegetarian potato, leek, and rosemary soup for dinner. It was delicious! The recipe was from a copyrighted Barnes and Noble cookbook, so I won’t post it verbatim, but it had leeks, potatoes, stock, rosemary, and whole milk in it…you can use your imagination! It was a pretty simple soup to make, so it would be easy to re-create.
Before dinner, we enjoyed some wine and cheese:

We built a fire in the fire pit in my parents’ backyard and enjoyed some wine, fireside, while we waited for the soup to cook. After about 30 minutes, it was time to eat!
The soup was topped with sauteed leeks and Greek yogurt. With the soup, we had a simple salad…and of course, bread! I love the flavor of leeks—so mild and delicious! The potatoes made the soup really velvety and creamy…without heavy cream!
Hmmm…how did the bread basket end up right by me? Interesting
For dessert, we passed around the little that was left of our Christmas cookies, along with part of a chocolate Santa. We also split up one of the coconut curry Theo chocolate bars that Ryan and I brought back from Seattle. I think I was the only real fan of that one—everyone else complained that it was too spicy! My palate must just be more sophisticated than theirs
We also split up the Theo’s salted caramels that we brought back for everyone. Of all the chocolate treats, those salted caramels are my favorite, I think. I love that combination!
Mini-delight:
We just finished up a raucous game of Taboo. I’m proud to say that Ryan and I dominated! I think it has something to do with being English teachers.
The game was cut short when *someone* had an accident.
But how can you stay mad at a face like this?

Regarding your question about the FODMAPS diet, it’s a really fantastic diet that eliminates many foods that those with IBS tend to have problems absorbing. Check out the link on the right side of my blog to learn more about it. It’s really helped me, a lot, so I would suggest it to your hubby. It takes a lot of self control though, especially since it entails staying away form wheat as much as possible!
