Mmmm…Vegetarian Mexican Night!
Tonight, we headed over to my sister and brother-in-law’s house (Katherine and Kevin) for a delicious Mexican dinner.
But before we ate, we drank!

Before we sat down for dinner, we munched on the chips, salsa (two kinds!) and homemade guacamole that my sis set out:
And then we sat down to dinner: Black bean, spinach, and tofu enchiladas, mexican couscous with peas, and a green salad (plus more salsa and guac!). Yummmmm…
My sister is a great vegetarian cook! Who knows…maybe she’ll be next to take a ride on the vegetarian train! ;-)
Finally, for dessert, we enjoyed the Pear and Apple Ginger Crumble that my mom and I made earlier this afternoon.

After dinner, we settled into their couches and watched the finale of Curb Your Enthusiasm. Pretty funny stuff– it made me wish Seinfeld were back on the air though…I miss that show!!
The recipe that my sister used was from this cookbook:
The cookbook is called The Whole Life Nutrition Cookbook : Whole Foods Recipes for Personal and Planetary Health, by Alissa Segersten and Tom Malterre. It isn’t strictly vegetarian, but it’s all about fresh, super-healthy cooking with whole foods. It also has over 200 gluten-free, dairy-free, and egg-free recipes. I own a copy of it myself, and have made several recipes from it. I would recommend it, especially for someone who might be interested in cooking healthier foods, but isn’t sure where to start, or doesn’t feel 100% comfortable in the kitchen. The recipes are all really simple, and everything I’ve made from it has tasted great!
It was a fun night. My sister and her husband moved back to Shreveport from Baton Rouge at the end of this summer, and they’ve been working on their house little by little, so every time we come home, it’s always fun to see the little changes that they’ve made. They’re expecting a baby girl (!!!) in March, so it will be fun to see the nursery when it’s finished.
