Low-key Dinner, Low-key Night
Well, as I predicted, Ryan and I are both exhausted tonight! We tossed around the idea of going over to my sister and brother-in-law’s for dinner and a movie, but we both decided that we would just fall asleep on their couch if we went over there!
We decided to just eat a simple dinner and relax for a while…we’re definitely looking at an early bedtime hour tonight!
Ryan reheated some gumbo, and I decided to make a simple omelet. I’ve been snacking all day (granola bar, crostini from last night, apple and almond butter, etc.), so I wasn’t very hungry for a big, “official” dinner. Still, the omelet was great– sometimes simple really is the best! On the side, I had a salad and a small tangerine.
Two-egg omelet with gruyere, topped with chopped parsley:
And a close-up of the ooooozey cheese…yessss:
Yum, yum.
Now we’re watching Arrested Development on the couch…it’s that kind of night. I’m sure some sort of dessert will make its way into my mouth soon.
Hope you’re having a more exciting night than me!!
See you tomorrow!

I LOVE Arrested Development! The characters are hilarious! I’m sad it’s not on anymore.
That omelet makes my mouth water. Yum!
I know, I love that show too! They were talking about making a movie version, but word on the street was the Michael Cera wouldn’t commit (and what’s an Arrested Development movie without George Michael?)
